Fes

Fes (Fez) is the modern cultural and culinary capital of Morocco and was the political capital of country several times in the past, the last time ending in 1912.  It is believed Fes was the largest city in the world from 1170-1180.  The most famous attraction of Fes is the labyrinthine medina, a place where you can get lost and require help to get out.  Young boys will try to guide you along the common walking path prescribed by Lonely Planet, risking being arrested by government authorities to make a few Dirham to help their families.  The best leathers in the world are also made at the tanneries deep inside the medieval medina.  Unfortunately, much of Fes is hidden behind the doors of the medina.  If you have a person take you on a shortcut without trying to sell you something through a few buildings, sharing the hidden grandeur, enjoy the experience.
